Louis Festa is the chef and co-founder of the restaurant Les Singuliers, which he established in Dordogne, where he expresses an inventive, sincere cuisine deeply rooted in its terroir. In 2025, he is launching Panat, an artisanal street-food concept in Saint-Astier that extends his culinary vision: offering food that is ‘good, local, and accessible.’
The word ‘Panat’ comes from Occitan and means ‘to fill or stuff in bread,’ a meaningful way to anchor the project in the culture of the South-West while giving it a strong identity. Panat is built on a responsible philosophy: Louis aims to prove that street food can be made with no compromise on product quality, flavour, or ethics.
