Estelle Dai is a French pastry chef of Chinese origin, born in Paris. Passionate about pastry from a young age, she trained at Le Cordon Bleu Paris, where she earned a pastry diploma followed by training in culinary management. After gaining professional experience and working for a time as a freelance instructor, she launched her own project in 2021.
In December 2021, she opened @unrêve, a venue combining a coffee shop, brunch, and pastry offerings. Inspired by her dual cultural background, she reinterprets French pastry with modernity, lightness, and original flavors. Black sesame, a signature element of her universe, fully embodies her culinary identity.
