Cécile Khayat is a pastry chef and co-founder of Mamiche, a neighborhood bakery and pastry shop opened in 2017 in Paris’s 9th arrondissement. A graduate of ESCP and with experience at Marlette, she set out to create her own business in 2016. With Mamiche, she reinvents the traditional bakery by combining homemade products, transparency, and a warm sense of community. Determined and resilient, she has overcome the challenges of a male-dominated industry to build a model focused on quality and customer delight. Cécile also emphasizes collaborative management and team cohesion, now leading a team of about fifteen people. Her approach blends passion for the product, artisanal excellence, and a strong local commitment.
