Guillaume Lopez-Marcoux is a key figure in the bakery, pastry, and viennoiserie (BVP) sector and has been leading L’atelier Papilles for nearly ten years. Passionate and self-taught, he became France’s youngest Maître Boulanger at just 18 years old. After completing an apprenticeship within the Histoire de Pains network, he acquired the brand in 2013 and transformed it into L’atelier Papilles.
Today, the network includes 35 locations that combine traditional baking with high-quality bakery-style dining, driven by strong values of boldness, commitment, and authenticity.
Guillaume continuously expands his expertise through his involvement with the Fédération des Entrepreneurs de la Boulangerie and the CEBP. A forward thinker, he embraces digital innovation and artificial intelligence to reinvent the customer experience and optimize the management of his bakeries.
