Sylvain Segura is the co-founder and managing partner of Tomé Café Cantine, a Lyon-based coffee shop and restaurant offering inventive Asian street food. Alongside Marianne Faudot, he envisioned Tomé as a place that blends Asian culinary influences with local products, inspired by the cities they have lived in (Toronto, Tokyo, Melbourne). Since opening in 2018, Tomé has gained recognition for signature dishes such as the katsu sando, made with short-supply-chain ingredients and techniques rooted in Japanese cuisine.
