Entrepreneur and Compagnon du Devoir baker, Franck Debieu founded L’Étoile du Berger in 2002. He opened his first shop in Sceaux and now leads a thriving company with 130 employees, 7 stores, a production center, and an Apprenticeship Training Center established in 2023.
Drawing on the skills he gained through the Compagnons du Devoir and his experiences from numerous travels, Franck Debieu — a specialist in sourdough bread — shares his expertise while adapting it to different cultures. His observations have even led him to develop an innovative process that makes the profession more accessible to women, reduces physical strain, and allows bakers to spend more time connecting with their customers.
